A Cool and Creamy Delight: Chia Seed Pudding

Too bad we didn’t know at the time that in addition to being part of the ‘pottery that grows’, Chia is also super healthy to eat. Chia is rich in omega-3 fatty acids, fiber as well as calcium, phosphorus, magnesium, manganese, copper, iron, molybdenum, niacin, and zinc. Chia seeds were a main component of the Aztec and Mayan diets and were the basic survival ration of Aztec warriors (not too shabby!).

From a culinary perspective, chia makes things thick. In fact, you can use chia as an egg replacer (I T ground to 3 T liquid) in recipes.
