Chocolate Covered Fig & Hemp Truffles

If you are like me, there is a VERY good likelihood you are going to eat some candy this holiday season.

Afterall, candy IS one of the Four Holiday Food Groups:

Fortunately, there are plenty of ways to enjoy a holiday treat AND nourish your body when you use healthy ingredients as the base of your recipe.

Chocolate Covered Fig and Hemp Truffles

These are delicious (and beautiful)! Figs are high in fiber and hemp seeds provide essential fats and some protein. All that goodness covered in chocolate—yes please!

2 cups dried black mission figs

2 Tablespoons hemp seeds

1 cup dark chocolate chips or chopped chocolate

2 teaspoons coconut oil or a no taste oil, like safflower

sea salt for garnish, optional

Remove the stems from the figs and discard. Put the figs and hemp seed in a food processor and process for about a minute, or until the ingredients are finely chopped and begin to stick together, adding water if needed.

Roll the fig mixture into teaspoon-sized balls and set them on a baking sheet or plate lined with parchment paper.

Place a double boiler or a small glass bowl over a saucepan with simmering water 2 inches from the bottom of the bowl. Place chips in the bowl and stir until all the chocolate is melted.

Roll the fig balls into the melted chocolate 1 or 2 at a time, until they are all covered (using a toothpick or kebab skewer). Place them back on the parchment paper and chill in the refrigerator until set, about 15 minutes. Serve at room temperature and enjoy!
